O'Connor’s Craft Bakery was established in 1961 by Pat and Mary O'Connor. The bakery is a family-run business and it employs approximately 125 people. The business has changed and evolved over the years and celebrates 60 years in business in August 2021. The company has eight shops, based in Ennis, Shannon, Limerick, Gort and Galway. Each day in the bakery, fresh handmade breads and confectionery are produced from traditional recipes. O'Connors are also experts in occasion cakes.
